Originally from Hawaii, Chef Michael Nguyen has honed his culinary skills at some of Las Vegas’ premier dining establishments, including L'Atelier de Joël Robuchon, Restaurant Guy Savoy, and Aqua Seafood & Caviar Restaurant, where he continues to serve as chef de cuisine. With the opening of Poke Market, he returns to his roots, sharing the traditional Hawaiian dishes he grew up enjoying with the Las Vegas community. Chef Nguyen’s passion for fresh, healthy eating is evident in every handcrafted poke bowl, packed with fresh, never-frozen ahi, and complemented with a variety of vegetable toppings and house-made sauces.

“Poke Market is a personal journey back to my origins, and I’m excited to share the traditional poke recipes that shaped my passion for cooking,” Chef Nguyen said. “Each bowl is crafted with the freshest ingredients to capture the true essence of Hawaiian cuisine. I look forward to welcoming the community to experience the vibrant flavors and authentic taste of Hawaii.”

For those looking to enjoy at home, fish by the pound will be available for takeout. In addition to the signature poke dishes, Poke Market will feature made-to-order handrolls, inari bombs and an array of Hawaiian sodas, juices, and snacks.
